Bio

Anthony Mauro is an adjunt professor at College of Hospitality and Tourism Management. He teaches courses in Food and Restaurant Management. Prior to joining the faculty at Niagara University Professor Mauro taught Foodservice Management at Erie Community College for over 30 years, and is a Professor Emeritus. He has also taught in Switzerland at the Centre International de Glion, in Montreux. In addition to his teaching career, he was the Food and Beverage Director at Fantasy Island and developed the Catering Program at the park. He was involved with Fantasy Island until the spring of 2007. He also has worked as a corporate trainer at the University of Buffalo, and has traveled for the U.S. Army as an Honorary Brigadier General. In that capacity he evaluated the food operations at military bases in the continental United States, Alaska, Germany, and Korea. He has worked for Hilton, and Sheraton Hotels in Buffalo, Washington, and Chicago. He owned and operated the Docket Restaurant in downtown Buffalo.

Professor Mauro has been active in the N.Y. State Restaurant Association (NYSR), International Association of Amusement Parks, and Attractions (IAAPA). He is a former President of the International Food Service Executives Association, and serves on their advisory council. He has also volunteered for the World University Games, and the new Burchfield Penny Art Museum. He is a member of St. Gregory the Great Church in Williamsville. He is a Senior Partner in Chapman-Forbes, an International Management Consulting firm, and he has also served as an expert witness around the country.

Professor Mauro is a graduate of Cornell School of Hotel Administration, and has a M.A. in Education from Canisius College. He grew up in a “Restaurant Family.”His parents were well known in Western New York. They owned and operated several restaurants and night clubs in the City of Buffalo. He was married to the late Lynn K. Mauro, and has three children, all of whom are involved in the Foodservice Industry. His oldest son owns and operates two restaurants in Amherst N.Y. (Siena and 800 Maple). His daughter is the office manager at 800 and his youngest son works in dietary at Sisters Hospital. He has five grandchildren.

Current Research

Currently I am researching the role of technology in Purchasing, and the changing structure of the Health Dept in the State and County. Also working on a number of seminars with local and national business executives for presentation to my Entrepreneur Class.

Current Involvement

Actively involved with International Food Service Executives Assn, WNY Restaurant Assn., Volunteer at Burchfield Penney Art Gallery on Food Committee, Sit on committee to revitalize the Business and Tourism Industry in Youngstown.
