Professor Scott A. Beahen

As of August 2001, Scott A. Beahen assumed the position of Director of Foodservice Operations for the College of Hospitality and Tourism Management at Niagara University. In this position, he oversees and teaches the two core courses, MHR 341, Food Preparation Principles and MHR 343, Menu Planning and Commercial food Production.

With these two courses, the students are exposed to what they need to know to communicate effectively with the Professional Staff Administering a foodservice program. Students are taught basic cooking foundation skills, enabling them to eventually design a theme menu, which they plan and organize to serve the public.

As an Adjunct Professor at Niagara University from 1988 till 2001, Scott A. Beahen has had the opportunity to teach several courses:

  • Food and Beverage Cost Control
  • Foodservice Layout and Design
  • Food and Beverage Purchasing
  • Menu Planning
  • Senior Seminar on Wine Tasting
  • Introduction to Foodservice Operations

During his tenure as an Adjunct Professor, Scott A. Beahen also has had the opportunity to take students several times to the National Restaurant Show in Chicago. He has also participated in the wine Jeopardy contest held in New York City. This is a contest between several Hospitality schools in the nation, vying to be the best in wine trivia, we actually came in third one year, beating out the CIA and losing to Cornell!

Scott A. Beahen obtained his Masters Degree in Business Administration at Niagara University in May 2007. He has published in the Journal of College and University Foodservice- volume 1 Number 4, 1994. He is also:

  • Member, the Cornell Society Of Hotelmen
  • Member, the Alumni Association of Culinary Institute Of America
